Cakes that are stacked look slightly different if a lift is introduced between the top and middle
tiers. This creates the height that is often required, but the overall look is not quite "traditional".
Sugarpaste and royal icing are both available in this design style; however, remember that fruit
cake layers should go below sponge cake, and that only fruit cake can be royal iced.
